Who flipped that switch? OMG! It’s sooo hot! From the low, low, low 60’s to 90 plus in the blink of an eye. Now I’m all for warm weather, that’s why I live in sunny Southern California, but geez . . . this ratcheting up 30 plus degrees overnight without benefit of itty-bitty incremental increases of a few degrees at a time is way beyond the pale in my book! Staying cool has now taken center stage in my world. With the fast approaching heat of summer, I find myself conjuring up exciting over-the-top tapas menus (last weeks tapas blog https://wp.me/p3E2rZ-5AJ) in order to entice my guests to “Come sit with me for awhile . . . and see what I’m bringing to the table.
To keep cooking to a minimum . . . think tapas. Of course you must have at least one dish of olives, but I like to go the extra distance and drench pimiento stuffed olives with marinade of whipped olive oil and Roquefort cheese with a smidgen of grated lemon peel. Allow these beauties to socialize (marinate) for at least a few hours. Mmmmm . . . yummmmmy. Now add cubed Spanish chorizo in white wine, frosty glasses of cold gazpacho, plus whatever else your little heart desires. As the napkin says below . . . go out there and do amazing things!

Ok this sounds amazing! Truth, I have never officially had Tapas! But I think I need to! I clicked the link in this and read your other post about the history of Tapas (small plates as lids) Wow How cool is that? Your suggested Tapas sound amazing!
